A Quick Green Chile Turkey Stew

  1. Get Those Potatoes Diced And Into Some Boiling Water For 10-15 Minutes (Cooked, But Still Cubes). Rinse In Colander With Cool Water And Set Aside. While The Potatoes Are Cooking, Dice Onion And Crush Garlic.

  3. Grab a big soup pot and get the olive oil heated up. Put in onions and garlic. Medium heat is fine, no need to torch the onions and, garlic. While the onions and garlic are cooking away, shred turkey, and rinse black beans.
  4. Once onions are soft, sprinkle in flour and make a roux. Whisk in turkey and vegetable stock. Add spices and all remaining ingredients (Young Guns Hot Green Chile, corn, black beans, and potatoes) and mix together. Bring to a boil and simmer 15-20 minutes.
  5. Optional: Top with a little cheddar jack and tortilla strips. Serve with warm corn tortillas.
