Sundried red chile pods are the central ingredient in much of Mexican and New Mexican food, like red enchiladas, red chile con carne and other delicions dishes.
Our red chile pods begin as Hatch green chile, but stay in the field to ripen under the warm sun of southern New Mexico.
When they are ready, we dry them out and preserve the wonderful, tangy taste and flavor (not to mention heat) in each one.
