Green Chile Tortilla Soup

Ingredients

  • 1/2 cup Young Guns Green Chile and Tomatillo Salsa, add more to taste
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp olive oil
  • 1 15.5 oz can black beans, drained
  • ½ 1 14.5 oz can fire roasted diced tomatoes
  • 1 15.5 oz can corn kernels, drained
  • Pinch sea salt
  • Pinch black pepper
  • 2 cups cooked chicken, shredded
  • 1 tsp chili powder
  • 1 tsp cumin
  • 3 cups chicken broth
  • 1 lime, juiced
  • ¼ cup cilantro, chopped
  • Tortilla strips, diced avocado and chopped cilantro for serving

Instructions

  1. Heat oil in a large skillet. Add onions and garlic. Cook for about 3-4 minutes.

  2. Pour in broth. Add the black beans, corn, diced tomatoes, lime juice, cilantro, pinch of salt and pepper, cumin, chili powder and green chile salsa. Cook for 2-3 minutes.

  3. Stir in the chicken and simmer for 10 minutes. Spoon soup into bowls and top with tortillas strips, avocado and cilantro. Enjoy
